This morning I will share with you one of my favorite weekend/weekday breakfasts. Not only is it good, but it is quick. It also makes a great breakfast idea for the kids. My baby tried them this week and loved them. Guess what he had for breakfast today again. Yes, you guessed correctly, banana pancakes.
This is not my invention, but rather Tamra Davis' s recipe. I don't know if you know her, but she is great. She is a film and television director that loves to cook. She has a website where she posts videos of her cooking adventures. She has some very delicious recipes and I will be posting some more of them along the way.
Banana Pancake Recipe
1 1/2 cup flour
2 tsp baking powder
1/2 tsp salt
2 tbsp sugar
1 egg
1 cup milk
1/2 cup plain yogurt
1 tbsp oil
1 banana sliced
Mix the wet ingredients together (egg, milk, yogurt, oil). In a separate bowl, mix together dry ingredients (flour, baking powder, salt, sugar). Now add them together and mix. Add the sliced bananas, and mix some more.
Heat up the pan, (make sure it is hot), then add a little butter or margarine. Pour the batter in small circles, making sure that the bananas are inside the pancake (otherwise they get burned). When the pancake starts to bubble flip them over. Cook to a light brown. You can serve them with butter and maple syrup.
