Hope you are all having a wonderful weekend so far. I usually try to finish up projects on Saturday and have some fun on Sunday. Well, one of those fun things is to bake something yummy for a Sunday afternoon treat. Lately my little guy has been helping me bake and he is loving it. He stirs and mixes and adds ingredients. It makes it so much fun to bake and we have a great time making and then eating our treats.
A while ago, I came across Tartelette. Do you know the site? It is an amazing website for all your baking and cooking needs. She has some amazing recipes, and I will share some of the ones I tried along the way.
Today I will share the Lemon Coconut Cupcakes.
Lemon Coconut Cupcakes
2 large eggs
1/2 cup granulated sugar
3/4 cup olive oil (don't skimp on the quality)
1 cup plain yogurt
zest and juice of a lemon
1 cup rice flour
1/2 cup millet flour
1/2 desiccated coconut
1 tablespoon baking powder
pinch of salt
shaved coconut to decorate (optional)
Preheat the oven to 350F and line cupcake tins with cupcake liners, slightly brush the inside with olive oil. In a large bowl, whisk together the eggs and sugar for about 2 minutes. Add the olive oil, yogurt, lemon juice and zest and whisk again so that everything is well mixed. Add the rice flour, millet flour, coconut, baking powder and salt and mix until the batter is smooth.
Divide among the muffin tins, filling no more than 2/3 of the way up. Bake for about 15-20 minutes or until test toothpick comes out clean.
Let cool completely before frosting. Once frosted, add a few pieces of shaved coconut if desired.
She also has a recipe for frosting if you are interested. I decided not to add frosting, since they were so delicious even without and not too sweet.
