Easy Peasy Apple Cake

One of my favorite things to do besides redecorating our home, working on crafts or painting, is baking. I love baking. I love trying new recipes and there is a self-satisfied gratification when you see your loved ones eating something that you made. Hopefully they enjoy it too, of course. More importantly, my little munchkin enjoys baking. It is our special time together, preparing and baking. I will admit that it can be challenging to let him do things, without him spilling, dropping, breaking (he has done all of these things) or just ruining the cake. He breaks eggs, measures, mixes from his high chair and he really knows what to do. He gets really excited to go and have a peak at the oven door and see how it turns out.


One of our favorite recipes is the Apple Cake recipe from Tamra Davis. I wrote about Tamra Davis before and I just love her recipes. She is a really creative lady and has perfected these recipes that she makes and sometimes her two sons help as well. Munchkin-friendly recipes.

Tamra Davis Cooking Show Apple Cake Recipe

Apple Cake
2 ½ cups of chopped apples (or two large apples)
1 cup sugar
½ a stick or 2 ounces of melted butter
½ a cup of applesauce
1 egg
1 ¼ cup of flour
½ a teaspoon ground cinnamon
½ teaspoon baking soda
½ teaspoon salt
¾ – 1 cup of chopped walnuts
Preheat oven to 350. Grease your baking dish. Mix the sugar, butter, applesauce, and egg together with a hand mixer. Whisk the dry ingredients together. Blend the wet and the dry ingredients and then add the apples and walnuts.
Pour into your baking dish and bake for 30-50 minutes (depending on your pan and oven temp) or until the knife or toothpick is clean when inserted.
